One of the best ways to get candid portraits is to have something for people to be doing while you catch those moments. With kids especially whose attention span can be limited, activities that engage them and keep them occupied can be a great asset to your photography. When someone is absorbed or engaged in something, their tendency to be aware of a camera pointed at them is diminished and you can get the candid moments you desire.
A few weeks ago I went with a group of kids to the Liberty Science Center in Jersey City, New Jersey. Their varied displays have something for everyone from snakes and bugs to skyscrapers and states of matter. With our group of seven children from ages two to nine there was always someone to photograph. Taking advantage of the Tamron 18-270 VC 15X zoom with it's stabilizer and high ISO's offered by my camera, I focused on getting candid portraits with the available light focusing on expressions and reactions.
